sub·jec·tive /səbˈjektiv/ : (adj) based on or influenced by personal feelings, tastes, or opinions.
The coffee experience is a subjective one. What you love about coffee might be entirely different than what your friend Bill loves, and that might be different entirely than what your mom loves.
Everyone has different tastes. You might like a dark roast espresso, while I enjoy a light roast pourover. Coffees do have an objective cupping score, given by professionals in the industry (called Q Graders), however, there's a lot of variance and within a "good" or "bad" grade that's a lot of subjective taste.
That's why we're here. To find the best coffees on the planet and bring them here to Denver for all to enjoy - in whatever way you deem fit.
Between our two founders, we have a decade of experience in roasting and selling coffee as well as managing a coffee shop. Here's a little more about us.
JJ started roasting coffee in 2016 when he purchased Roostercat here in Denver. After a stint there, he sold his portion and used the money to open up his own shop on East Colfax named Glass Arrow. He still runs that shop and you've seen his coffee in Roostercat, Mutiny, Colfax and Ivy, and plenty of other shops around town. JJ likes spending his weekends with his family and restores neon signs and old trucks in his spare time.
Nick founded Ground Shark Coffee in 2018 and has been in the industry since. GSC is mostly an ecommerce store, but you can find the coffee in MMA gyms across the country and in Gravity Espresso up on CU Boulder's campus. Nick spends his spare time in the gym and eating a whole bunch of pancakes.
